How to Cook Fish… the Real Deal!!

1. DRY the fish very thoroughly with paper towels

2.Cook fish FAST and on a HIGH HEAT.

3. DO NOT OVER COOK FISH :  200g fish fillet takes about 8 minutes.

1 1/2 minutes skin side up in a hot pan, 1 1/2 minutes on the other side,   3-4  minutes in a 180C oven, rest it for a few minutes, just as you would a steak.

3) Grilling SKIN SIDE UP first produces better results! The grill marks on the flesh side are cleaner and there are fewer flare ups.
Rely on your touch and sight. If you’re cooking fillets, you’ll see the flesh losing its translucency.
